Caramelised White Almond Dragées

We were a little tired of white chocolate being… predictable.

Too sweet. Too safe. Too familiar.

So we decided to turn up the heat.

Slowly, patiently, we let the white chocolate cook — just enough for it to deepen, to transform. What started off creamy and mild began to develop a beautiful, nutty warmth. Hints of toasted caramel, and a richness that felt far more grown-up than before.

And then came the almond.

Perfectly roasted, with a deep crunch and natural nuttiness that didn’t compete — but completed the story.

Each dragée brings the two together - the slow-caramelised chocolate wrapped around a crisp roasted almond, creating a balance that’s rich, layered, and quietly addictive.

Familiar, but not quite the same.

Just the way we like it.
