We have written before about packaging as experience — the way a well-designed box sets an expectation, creates an anticipation, becomes part of the memory of the gift. That is all true, and it matters.
But there is another reason we obsess over packaging that is less romantic and more fundamental: packaging is the last line of defence between months of careful work and a customer who receives something that isn't right.
This is what our packaging is actually doing.
Protecting Against Heat
Chocolate melts at approximately 34–35°C. India's summer regularly exceeds that temperature in transit — in courier vehicles, in sorting facilities, on doorsteps in the afternoon sun. A bar of chocolate that leaves our kitchen in perfect condition can arrive as a puddle if the packaging doesn't manage the thermal environment of the journey.
Our summer packaging uses insulated liners and gel packs calibrated to maintain a lower internal temperature for long enough to survive typical transit times. The gel packs are chosen carefully: too cold and they can cause condensation inside the box, which introduces moisture that affects texture and can cause bloom. Too warm and they don't do enough. The right temperature range is specific, and we test rather than assume.
In cooler months, the insulation requirements change. We adjust the packaging seasonally — not because we want to, but because the alternative is sending chocolate that arrives in worse condition than it left.
Protecting Against Moisture
Moisture is chocolate's second enemy after heat. Chocolate absorbs moisture from its environment, which can cause sugar bloom — the white, crystalline surface that appears when moisture dissolves surface sugar and then evaporates, leaving the sugar crystals behind. Sugar bloom is safe to eat and doesn't significantly affect flavour, but it looks wrong, and customers notice.
Fresh ganache and truffles are particularly sensitive to moisture. The cream in the ganache means these products already have a higher water activity than a plain chocolate bar, and any additional moisture from the environment accelerates deterioration.
Our packaging uses moisture barriers — materials that limit the exchange of humidity between the inside of the box and the outside environment. In humid conditions, particularly during monsoon season, this barrier is as important as the thermal insulation.
Protecting Against Physical Damage
A courier package travels further and more roughly than most people imagine. It is sorted by machine, stacked under other packages, loaded and unloaded multiple times. A box that is not structurally robust enough to survive this journey will arrive with broken pieces, shifted contents, and a presentation that undermines everything the product is supposed to communicate.
We test our packaging under realistic conditions — not just for thermal performance, but for structural integrity. The box must hold its shape under the weight of other packages. The interior must hold the chocolates in place so they don't shift and collide during transit. The closure must stay closed.
For our most delicate products — fresh truffles, filled ganache pieces — the interior structure is designed to cradle each piece individually. This is more expensive than a generic insert. It is also the difference between a product that arrives looking like it was made with care and one that arrives looking like it was packed in a hurry.
Protecting Against Odour
Chocolate absorbs odours from its surroundings with remarkable efficiency. A bar stored near strong-smelling food will taste of it. A package that travels in a vehicle carrying other goods can pick up odours that affect the flavour of the chocolate inside.
Our packaging uses materials that limit odour transfer — not perfectly, but meaningfully. This is one of the less visible functions of the packaging and one of the least discussed, but it is real. A chocolate that arrives smelling and tasting of itself rather than of its journey is a chocolate that delivers the experience we intended.
Protecting the Work
The deepest reason we obsess over packaging is this: every piece of Cavasa chocolate represents a significant investment of time, skill, and attention. The ganache in our Ganache de Luxe was made in a small batch, tasted, adjusted, set at a controlled temperature, and packed by hand. The truffles were rolled individually. The dragées were panned over hours.
If that work arrives at its destination in compromised condition — melted, bloomed, broken, tainted by odour — the work is lost. Not just the product, but the experience it was supposed to create. The customer who receives something that isn't right does not think "the packaging failed." They think "the chocolate wasn't good."
Packaging is the mechanism by which the work survives the journey. It is not separate from the product — it is the final step in making the product. We treat it accordingly.
What This Costs
Good packaging is not cheap. Insulated liners, gel packs, structural inserts, moisture barriers — these add meaningful cost to every order, particularly in summer when the thermal requirements are highest.
We absorb this cost because the alternative — cheaper packaging and more compromised deliveries — is more expensive in the ways that matter most. A customer who receives something that isn't right is a customer who doesn't come back. A customer who receives something that arrives in perfect condition, opens a box that looks considered, and tastes chocolate that is exactly as it should be — that customer comes back.
The packaging cost is, in this sense, a customer retention cost. We think of it that way.
