There is a moment that every chocolate lover knows, even if they've never thought to name it.
You break a piece from a bar. There's a clean, sharp sound — a snap that feels satisfying in a way that's hard to explain. Then you place it on your tongue, and it begins to melt — slowly, evenly, releasing flavour as it goes. By the time it's gone, you're already reaching for another piece.
None of that is accidental. All of it is science.
What Chocolate Actually Is
Before the science makes sense, it helps to understand what chocolate is at a structural level.
Chocolate is a suspension of cocoa solids and sugar particles in cocoa butter — the natural fat extracted from cacao beans. Cocoa butter is the key ingredient that gives chocolate its unique physical properties: it is solid at room temperature, melts at just below body temperature, and can exist in multiple crystalline forms depending on how it is processed.
That last point is everything.
The Six Forms of Cocoa Butter
Cocoa butter can crystallise into six different forms, labelled I through VI by scientists. Each form has different properties — different melting points, different textures, different appearances.
Only one of these forms — Form V, also called the beta crystal — produces the chocolate we actually want to eat. Form V crystals give chocolate:
- A smooth, glossy surface
- A clean, sharp snap when broken
- A melt that begins just below body temperature, releasing flavour gradually
- Resistance to bloom — the white streaks that appear when chocolate is stored poorly
The other five forms produce chocolate that is dull, soft, crumbly, or waxy. They melt at the wrong temperature. They look wrong. They feel wrong in the mouth.
Tempering is the process of coaxing cocoa butter into Form V and keeping it there.
What Tempering Actually Involves
Tempering is a precise sequence of heating and cooling that guides cocoa butter crystals into the right form.
The process, in simplified terms:
- Melt completely: The chocolate is heated to around 45–50°C, melting all existing crystal structures. You start from scratch.
- Cool to working temperature: The chocolate is cooled to around 27–28°C. At this temperature, multiple crystal forms begin to develop — including Form V, but also some unstable forms you don't want.
- Raise slightly: The chocolate is warmed back to 31–32°C (for dark chocolate). This melts out the unstable crystals while leaving the Form V crystals intact. What remains is a chocolate seeded with the right crystal structure throughout.
This is why professional chocolatiers use thermometers obsessively. A degree or two in the wrong direction at the wrong moment and the temper is lost. The chocolate will still taste the same — but it will look dull, snap poorly, and bloom within days.
At Cavasa, we temper by hand in our Ambur kitchen. In a climate that regularly exceeds 35°C, maintaining the precise temperatures required for proper tempering is a genuine technical challenge. It is also, we think, one of the things that separates chocolate made with care from chocolate made at scale.
Why the Snap Matters
The snap of well-tempered chocolate is not just aesthetically pleasing. It is diagnostic.
A clean, sharp snap tells you that the cocoa butter is properly crystallised — that the chocolate was made correctly and stored well. A soft, yielding break suggests poor tempering or temperature damage. A crumbly break suggests the chocolate was never properly tempered at all.
When you break a piece of our Feuilletine Crunch Dark Chocolate and hear that snap, you're hearing evidence of the process that went into making it. It is, in a small way, the chocolate telling you it was made right.
Why the Melt Matters Even More
The melt is where flavour lives.
Cocoa butter melts at approximately 34–35°C — just below the temperature of the human mouth. This is not a coincidence of nature; it is one of the reasons cacao became a food in the first place. The fat melts cleanly on the tongue, releasing the flavour compounds suspended within it gradually and completely.
Poorly tempered chocolate melts unevenly. Waxy or grainy textures in the mouth are signs that the cocoa butter crystals are not uniform — some melt too quickly, some too slowly, and the flavour release is disrupted.
Well-tempered chocolate melts in a single, smooth wave. The flavour arrives in stages — top notes first, then mid-palate complexity, then a finish that can linger for thirty seconds or more in a bar made from exceptional cacao.
This is why our premium bars feels the way it does. The shell is properly tempered dark chocolate; the ganache filling melts at a slightly different rate. The two textures arrive on the palate in sequence, creating a layered experience that a single-component chocolate cannot replicate.
Bloom: When Science Goes Wrong
Chocolate bloom — the white or grey streaks and patches that appear on the surface of chocolate — is the visible result of crystal instability.
There are two types:
Fat bloom occurs when cocoa butter migrates to the surface and recrystallises in an unstable form. This happens when chocolate is stored at fluctuating temperatures — warming slightly, then cooling, repeatedly. The cocoa butter moves, reaches the surface, and sets in the wrong crystal form.
Sugar bloom occurs when moisture reaches the surface of the chocolate, dissolves some of the sugar, and then evaporates — leaving sugar crystals behind as a white, grainy film.
Bloomed chocolate is safe to eat. The flavour is largely unaffected. But the texture suffers, and the melt is compromised. It is also a sign that the chocolate has been through conditions it wasn't designed for.
In India's climate, avoiding bloom requires careful storage: cool, dry, away from direct light, and away from strong odours (chocolate absorbs smells readily). Ideally between 16–20°C. This is why we take our cold chain seriously — not just for safety, but for quality.
What This Means When You're Choosing Chocolate
Understanding the science gives you a practical toolkit for evaluating chocolate before you even taste it:
- Look for gloss. A smooth, even sheen indicates good tempering and proper storage.
- Listen for the snap. Clean and sharp is right. Soft or crumbly is not.
- Check for bloom. A little is not a disaster, but significant bloom suggests the chocolate has been through temperature stress.
- Let it melt. Don't chew immediately. The melt will tell you more about the quality of the chocolate than almost anything else.
These are the same criteria we apply to every batch we make. They are not complicated. They just require attention — which is, in the end, what good chocolate always comes back to.
